Ingredients:
Oil
2 glove garlic
Fresh chilli
Fresh ginger
3 cups chicken legs
3 pcs carrot
2 tbsp soy sauce
1/2 cup judas' ear mushroom
1/2 cup white shimeji
1/2 cup brown shimeji
3 pcs shitake
Leek
1 pcs pak choy
2 tbsp mirin
2 tbsp soy sauce
2 tbsp brown sugar
2 tbsp Potato starch + 1 cup water

Method:
Heat the oil in a wok. Add chopped garlic, chilli and ginger. Sauté about 1 minute.

Add chpped chicken legs and 1 tbsp soy sauce. After 2 minutes remove the chicken meat out.

Heat the oil in wok. Add carrot, white and brown shimeji, shitake and judas' ear mushroom.

Cut the leek and pak choy and add to the wok.

Than add 2 tbsp soy sauce, 2 tbsp mirin and 2 tbsp brown sugar. Mix it well.

Mix the potato starch and cold water together and put it to wok. Cook for 1 minute.

Taste, if needed season with soy sauce, brown sugar and mirin.

Serve warm with basmati rice.
